PESTO CRUSTED SALMON

Ingredients

•250g/9oz sweet potatoes

•2 boneless, skinless salmon fillets (approx. 125g/4oz each)

•1 tbsp green pesto

•1 tbsp fresh breadcrumbs

•125g/4oz sugar snap peas

•Lemon wedges to serve

•Salt & pepper to taste

Method

1Preheat the grill and put a kettle on to boil.

2Peel & dice the sweet potatoes and place in a saucepan of boiling water.

3Mix the pesto and breadcrumbs together and smother on top of the salmon fillets. Place under the grill and cook for 10-13 minutes or until the salmon fillets are cooked through.

4Whilst the salmon is cooking steam the sugar snap peas.

5Drain the sweet potatoes and serve with the sugar snap peas & salmon with lemon wedges on the side.
